Grind 2 oz pork rinds in a small food processor. Add seasoning (1 tsp - 1 TBSP; smoke paprika, sharp paprika, curry powder, mustard powder or other) salt and pepper. Coat 4 thin (1/4 ") pork chops in pork rind mixture. Put pork chops on cooke sheet sprayed with PAM. Bake at 375 for 15-20 minutes.

Recipe for May 2, 2010:
Dinner: Fake Waldorf Salad
1/4 cup chopped yellow and orange sweet peppers
10 cherry tomatoes, cut in half
2 stalks celery, chopped
2 Tbsps chopped walnuts or pecans
2 Tbsps mayonaise
1 Tbsp wasabi/ginger dressing
fresh ground pepper
Mix all and serve.
Had this with Costco frozen hamburgers for a quick dinner after a few days at the shore.
